Manzanilla Pasada, Pastrana La Gitana

Pale gold colour. Light enticing nose anticipating a fresh attack. Very light and clean on the palate with an extensive finish which closes on a salty, tangy note. Lots of subtle notes of nuts and citrus. Very fine and elegant wine with a ballerinas kick belying its fragrant and delicate structure and a long finish.

One is looking to compliment or enhance the salty, fine textures of this clean wine. The Sherry cleanses the palate, while the paté rounds up the wine and replaces a slight hollowness. The sweetness in the paté compliments the dryness smoothing the sherry whilst tempering the otherwise dry and staccato notes in the wine. The dish mellows any ascerbity in the wine. The saltiness matches perfectly the rich, smoothness of the paté.
