Champagne AyalaChampagne AYALA is one of the longest-established champagne Houses; it has been based in Aÿ, at the heart of the great champagne vineyards, since it was founded over 150 years ago. Independent and family-owned, it is still today the archetype of a great and historic Champagne House, producing top quality wines which are enjoyed throughout the world for their freshness and elegance.

Edmond de Ayala founded the house in 1860 in Aÿ where he had learnt the ropes of making Champagne. Much of the success of the House was due to his younger brother Fernand, who went to live in London and introduced the British aristocracy to one of France's favourite Champagnes and also thanks to the notable 1865 vintage. At this time Champagne Ayala became part of the closed circle of Syndicat des Grandes Marques in 1882 and helped to set up the Benevolent, a drinks industry charity.

The 1920s was the 'Golden Age' and also for Ayala. During this decade they were selling more than one million bottles per annum. They supplied the royal courts of England and Spain and employed more than 100 workers in the vineyard and cellar.

All the vinification, remuage, dégorgement habillage and élévage is conducted at the their production site in Aÿ. Their 2 kilometres of underground cellars, carved from the chalky hillside of Aÿ,  can hold 2.5 million bottles.

The current buildings in the Art Deco style designed by French architect Demay, were reconstructed after they were destroyed by the vignerons revolt of 1911.
