Very pale with hints of lime colour. Very fresh and vivacious. Subtle nose of flowers. Strong acidity. Very fine bubbles and fine textured. Quite smokey with some hints of almond. Disappears in the mouth like rice paper. Elegant. Aiming for a vinous style. They suggest it is perfect for oysters or caviar.
