Pale gold. Soft and subtle aromas. Beautifully smooth. Very long. Great elegance and finesse. Very good salinity with lots of citrus in the mouth ending on a touch of chalky bitterness. A classic among Champagnes. Gimonnet started releasing a ‘non dose’ in 1985 with their 1979 vintage because they felt the wine had the requisite balance not to need any dosage. This is what drives their philosophy and today they continue to make wines without a dosage depending on its inherent qualities and character rather than producing such a wine to complete their line-up. So, depending on the year they will release their Exta brut Oenophile.
This is largely a blend of wines from Grand Cru terroirs: Cramant (23%) - grand cru - Chouilly (45%) - also grand cru, Oger Grand Cru (8%) and 24% Cuis 1er Cru.
