Sister company to Salon. All its vineyards sourced from the Grands crus of the Côte des Blancs, Le
Mesnil-sur-Oger, Oger, Avize and Cramant for chardonnay. Delamotte do not use oak, all the wines are fermented in stainless steel tanks. There is no particular yeast selection. A restrained dosage is used. The wine in bottle “grows on the lees” for 6 to 7 years before disgorgement. The disgorged wine will benefit from further ageing for 6 to 10 years and some well-cellared vintages carry on evolving for 20 years or more.
