La Fleur Jaune Pouilly-Fuissé 2011

Straw colour. Subtle honey nose with palate flavours of citrus, pineapple and pears. La Fleur Jaune is smooth but this is not one of those creamy or buttery Burgundies: it is more flinty and mineral. The wine possesses some complexity with attractive citrus flavours. La Fleur Jaune is refined, even something of a thoroughbred and retains its finesse due to a light oaking. This has contributed to its complexity without adding any oak character. It needs a light, expressive even aromatic dish to bring it alive and also to close slightly the mid-palate.

Food2Wine matching: (if applicable)

Tiger prawns with avocado, quinoa, basil, tomato to... a glass of Pouilly-Fuissé

The matched recipe is a good marriage because it compliments the citrus flavours in the Pouilly-Fuissé, whilst not overpowering them. La Fleur Jaune’s lightness masks its ability to cut through oily or rich flavours, such as shellfish, with the precision of a scalpel. However, above all, it is the texture of this dish, the fine granulation of the quinoa, the disparate and distinct flavours from the components and the taste of lime which really brings out the zest and minerality in La Fleur Jaune enhancing its characteristics: it is all about preserving the finesse of this classic Pouilly-Fuissé, whilst filtering the citrus notes and without overburdening the delicate attributes which justify its existence. The salad is a great starter and will leave you wanting more.
