Made from their vineyards and partner vineyards all situated in the villages of Le Mesnil, Oger, Avize and Cramant. Wines are fermented in stainless steel tanks. Low dosage - just 10% reserve wines are used, to "favour the essential character of the vineyards." The wine in bottle “grows on the lees” for 4 to 5 years before disgorgement, to counteract some of the austerity of the terroir. The disgorged wine will benefit from further ageing for 2 to 6 years.
